Stokes ChocCoffee Mocha Muffins
Preheat the oven to 200⁰c and grease and line 6 holes in a muffin tin.
To make the muffin mix, sift together the dry ingredients (flour, cocoa powder, baking powder, bicarbonate of soda, salt, and sugar) into a mixing bowl.
In a second bowl, whisk together the egg, buttermilk, coffee, butter and oil.
Pour the wet ingredients into the dry, folding in the chocolate chips until well combined.
Bake at 200⁰c for 5 minutes then reduce the temperature to 180⁰c for a further 15 minutes. When baked, leave to cool.
To make the butter cream, mix the butter, icing sugar, coffee, salt and cocoa powder. Spoon the mixture into a piping bag and on top on the muffin to decorate.
